Green Tea & Clementine Smoothie

I told you I’d be back with more smoothies, and here I am. This is the second smoothie I tried for the detox experiment . Ingredients (for 1 person): 3 clementines; 250 mL of cold green tea; 2 or 3 mint leaves Preparation: Mix all ingredients in a blender until you obtain a homogenous mixture, and serve. The book says: “Green tea is rich in vitamin B, folates, manganese, potassium, magnesium, caffeine and other antioxidants, among which are catechins. This smoothie is a source of vitamins, facilitates digestion and is refreshing .”   This smoothie had really big summer vibes for me, as it was so cool and refreshing. Since I don’t really appreciate when smoothies come out really thick, the green tea made it more fluid for me and it made me enjoy it even more. I really recommend it. Spinach Goodies

I can’t stand the idea of eating some vegetables, well, most of them! And it’s not all about the taste, it’s mostly about texture. I can stomach eating lettuce and small quantities of spinach. However, I found a way to consume some vegetables, by transforming them into something a little bit different. Today I want to show you a way to eat a lot of spinach in one sitting! Here’s what you’re going to need:      - 1 bag of fresh spinach (I have loads of spinach in my garden, so I don’t need to buy   them);      - Half of a natural yoghurt (plain yoghurt, no sugar);      - 1 garlic clove;      - 2 small shallots;      - Salt and pepper. Start out by washing your spinach really well and cooking it in boiling water until it’s almost done. Then, put the spinach in a processor (save the water you used to boil it), add the rest of the ingredients and season it with salt and pepper, to your liking. Process everythi...

Sponge Cake

This is the final recipe from our Easter cakes, here it goes! Ingredients: 12 eggs 500g of sugar 250g of self-rising flour Lemon zest Preparation: Pre-heat the oven to 180º; Separate the yolks from the egg-whites, and whip the whites into stiff peaks; Mix the yolks with the sugar (you can always cut on the sugar, we always use ~50g less than what the recipe says) add the flour; Add the whites but involve them, don’t mix them. This makes the dough super fluffy; Add some lemon zest; Bake until done (do the toothpick test, it never fails); And there you have it! French Pudding

Today I bring you the recipe for the French pudding we made this Easter . You didn’t think I’d forget, right? Ingredients: 2 eggs 10 yolks 400g of sugar ½ L of milk 1 Port wine chalice 2 tbsp (soup spoons) of corn starch Liquid caramel Preparation: Mix the 2 whole eggs and all the yolks with the sugar Add a part of the milk and use the rest to dilute the corn starch Mix everything together Coat the inside of the mold with the caramel Pour the mix into the mold Place the mold in a pressure cooker (fill the pressure cooker with water that reaches the middle of the mold on the outside) and bake it in water bath for 25 minutes. So, this one can be a bit trickier but it’s just a matter of trying and perfecting the technique. Banana Pancakes

Taking advantage of the inspiration from yesterday’s Carrot Cake , this morning I wanted to have some amazing healthy pancakes , I had been missing for a while, so I got to it and my day is already 100 times better! So, if you are home in quarantine, in your pajamas, without anything to do and wondering about what to eat, this easy recipe is for you! Check it out: Ingredients : 1 whole egg 1 egg white 1 ripe banana 2 tbsp (soup spoons) of oat flakes Cinnamon Preparation : Put all the ingredients in a blender and mix well until you get a homogenous paste; Pour each serving into a non-stick frying pan and cook both sides; Serve with honey, jam, fresh fruit or whatever you like. And there it is! Super quick and easy , I had mine simple accompanied by my coffee and almond milk almost an hour ago and I am still full! Hope you enjoy!

Carrot Cake

As I mentioned earlier , my interesting activity for the day was baking a cake with my mom! It turned out to be a very quick and easy (and super tasty) recipe, so I decided that it would be a good idea to share it. I know I have some viewers from the USA so I’ll try to mention the different measures used in a way most people can understand. Here we go! Ingredients : 2 cups of flower 1 cup of sugar 1 tea spoon of ferment 1 tbsp (soup spoon) of corn starch 3 whole eggs 1 cup of oil 3 medium-size carrots Preparation : Pre-heat your oven to 180ºC (356ºF); Put the eggs, oil and carrots in a blender and pulp it; Mix the pulp with the rest of the ingredients in a bowl; Add a pinch of salt and some cinnamon; Bake for ~25 minutes. This was the result! The cake came out very fluffy and tasty and it was a success here at home (it’s almost gone!).
