Chocolate & Strawberry Cake

I said I was on a diet and I am, trust me! If any of you had the courage to watch my first rant on Youtube you might know that May 9 th was my sister’s birthday. Since we couldn’t go and see her, we decided to bake a cake we never tried before, and this is how it went! Ingredients: (for the dough) 6 eggs; 200g of sugar; 170g of flour; 1 tea spoon of baking powder; 40g of powdered chocolate; Butter (to grease the mold); Flour (to sprinkle on the mold). (for filling and coverage) 300g of culinary chocolate (tablet); 250 mL of cream; 350g of strawberries; Chocolate sprinkles. Preparation: Mix the eggs with the sugar first and then add the flour, baking powder and powdered chocolate. Mix well. Grease a 23 cm diameter mold and sprinkle it with some flour. Pour the previous mix into it and bake it at 180ºC (356ºF) for 35 minutes. Let the cake cool off and remove it from the mold. Cut the cake in two halves, longi...

Here’s the recipe for one of the cakes we baked here this Easter ! I honestly don’t know if there’s any other way to call it anywhere else in the world, so I literally just translated it from how we call it in Portuguese. Ingredients: 250g of sugar 125g of flour 6 eggs 1 tea spoon of ferment Nutella (or any kind of spreadable chocolate) Preparation: Pre-heat your oven to 180ºC; Mix the eggs, sugar, flour and ferment in a bowl until you get a homogenous mixture; Pour the mix into a square or rectangular mold; Bake until done (~10 – 15 minutes); Remove cake from the mold and spread the chocolate on top; Roll the cake until you obtain the desired spiral shape. Quarantine Thoughts - Day 25

I was going to say that today was pretty uneventful, but then I thought about and it actually wasn’t. I’ll start from the beginning. Sephora Collection Green Clay Mask – Take 2 I decided I was going to try the Sephora Collection’s Green Clay mask again, but I wanted to spread it out more, from the nose to the cheeks, because I have a ton of visible pores in there as well. It works ! I can’t tell you why or how but my pores were shut, my skin was smooth and I just stared at the mirror for ages! When this quarantine ends and it is really safe to go out there again, I’m planning a field trip to the nearest Sephora ! Easter Celebrations Today it was just me, my parents and my cats, but usually this humble home is full on this day. I’m not religious, so I usually stay out of the religious parts of the celebrations, but my parents and sister like to have the house blessed by the priest every year, which obviously didn’t happen. To me, dates like these are a good reminder...

Easter is tomorrow and, even though this might be the most different Easter of our lives, we still wanted to keep the traditions that we could. That means today was BAKING DAY ! We usually have to do a lot more than what we did today (because the family gets together and all) but since it’s just me and my parents we decided to do the three sweets we’re most used to: sponge cake , chocolate roll and French pudding . It always fun setting up everything to start baking with my mom: getting all the ingredients, the utensils, prepping up the oven... I always help with mixing, either by hand or with the help of a mixer. Usually mom mixes by hand (she’s a really strong lady) but age starts getting to everyone so I’m always around to lend a helping hand! I love the bond that comes with these little moments in life, of sharing, laughing and loving. It’s incredible how food can bring people together, but it does! Here are the final products: ...

Today was a thought provoking, decision making day. I decided I was going to enroll in an online course at Coursera (an online platform I mentioned before ). I chose the course “ Introduction to the Biology of Cancer ” because I felt it would be an interesting addition to my curriculum. Even though I studied Biology and Genetics, I never focused on anything related to cancer. Many studies are conducted in relation with these diseases, so I figured it would only be an advantage to enroll. It is a course offered by Johns HopkinsUniversity and I am really excited to start! I’ve also been craving some sweets lately, so I figured gelatin was an okay way to try and distract me from them. I had many flavors of gelatin to try out but I found one that was completely new for me: currant gelatin . It was so delicious! 2-Ingredient Bavaroise

Yes, you read that correctly, I am about to tell you how to make a delicious, yet healthy , bavaroise using only 2 ingredients. It’s really simple , I promise you can do it at home in like... 5 minutes? Trust me. Ingredients : - Flavored gelatin (the flavor you love the most); - Liquid yoghurt of the same flavor. Preparation : First you prepare the gelatin, according to the instructions in the box. For every 500mL of gelatin prepared, pour 1 yoghurt of the same flavor into the mixing bowl. You can then distribute the mixture into smaller serving bowls, put them in the fridge and let it solidify. For the "healthy" effect you can do this with zero calories gelatin and yoghurt. And that is it! I promised it would be simple! If you put the mix into clear cups or bowls, you’ll see a really cool effect where some of the gelatin separates from the yoghurt and creates a different phase.
