Green Tea & Clementine Smoothie

I told you I’d be back with more smoothies, and here I am. This is the second smoothie I tried for the detox experiment . Ingredients (for 1 person): 3 clementines; 250 mL of cold green tea; 2 or 3 mint leaves Preparation: Mix all ingredients in a blender until you obtain a homogenous mixture, and serve. The book says: “Green tea is rich in vitamin B, folates, manganese, potassium, magnesium, caffeine and other antioxidants, among which are catechins. This smoothie is a source of vitamins, facilitates digestion and is refreshing .”   This smoothie had really big summer vibes for me, as it was so cool and refreshing. Since I don’t really appreciate when smoothies come out really thick, the green tea made it more fluid for me and it made me enjoy it even more. I really recommend it. Spinach Goodies

I can’t stand the idea of eating some vegetables, well, most of them! And it’s not all about the taste, it’s mostly about texture. I can stomach eating lettuce and small quantities of spinach. However, I found a way to consume some vegetables, by transforming them into something a little bit different. Today I want to show you a way to eat a lot of spinach in one sitting! Here’s what you’re going to need:      - 1 bag of fresh spinach (I have loads of spinach in my garden, so I don’t need to buy   them);      - Half of a natural yoghurt (plain yoghurt, no sugar);      - 1 garlic clove;      - 2 small shallots;      - Salt and pepper. Start out by washing your spinach really well and cooking it in boiling water until it’s almost done. Chocolate & Strawberry Cake

I said I was on a diet and I am, trust me! If any of you had the courage to watch my first rant on Youtube you might know that May 9 th was my sister’s birthday. Since we couldn’t go and see her, we decided to bake a cake we never tried before, and this is how it went! Ingredients: (for the dough) 6 eggs; 200g of sugar; 170g of flour; 1 tea spoon of baking powder; 40g of powdered chocolate; Butter (to grease the mold); Flour (to sprinkle on the mold). (for filling and coverage) 300g of culinary chocolate (tablet); 250 mL of cream; 350g of strawberries; Chocolate sprinkles. Preparation: Mix the eggs with the sugar first and then add the flour, baking powder and powdered chocolate. Mix well. Grease a 23 cm diameter mold and sprinkle it with some flour. Pour the previous mix into it and bake it at 180ÂșC (356ÂșF) for 35 minutes. Let the cake cool off and remove it from the mold. Cut the cake in two halves, longi...

Starting Over

In the summer of 2018, I decided I wanted to change my life and I started a diet, accompanied by a professional. By the beginning of 2019 I had lost ~20Kg (~44 lbs) and I was close to my goal but I started letting go. Slowly but surely, I started gaining every single bit that I lost and I am completely aware that even though most of it is my fault, 2019 was a year of much anxiety for me, because of my thesis and constantly having to meet deadlines. But I think that’s an excuse. I’m back to square one, but I am optimistic ! I feel mentally right, I feel the moment is right and I am ready to start again! Yesterday was my first day back on track and I ate so, so well! I got back into my experimental healthy cooking and I am having the best time thinking about what to do next. I’m starting to think I have a REAL passion for cooking and not just eating... The hardest part about the first week (maybe first 2 weeks) is cutting off the sugar , because sugar is a drug . I love food and always loved eating. Wasn’t always really opened to trying out new things, but with time that changed. The biggest factor that changed how I viewed new food and tastes was learning how to cook . As I learned my way around the kitchen, new ideas and curiosities started popping in my head. Now I love cooking and trying new things. Cooking is an extra special experience for me because I am fortunate enough to have many of the things I need in the nature that surrounds me. We plant loads of vegetables and also have chickens that give us the most amazing eggs (oh yeah, our eggs are the most important part of our cakes ). What I’m most passionate about are herbs . There’s nothing more satisfying to me than starting a dish and then going outside and gathering some fresh herbs right out of the garden and into the pot. Detox Smoothie (Low Carb)

I told you I’d be back with this recipe and some more pictures, of course! The good thing about recipes like this is, as long as you have all the ingredients and a blender, you can make new and exciting things in a wink of an eye! Ingredients: 2 medium carrots 1 orange 200mL of green tea 1 mint leaf 1 basil leaf Preparation: Put all the ingredients in a blender and mix until its homogeneous. For a more refreshing feel you can add ice. Now, here’s some tips for this recipe in particular. This drink will be particularly pulpy , if you’re not really into that texture you can always add a bit more orange or tea or you can strain the mix into your cup (but that will be a bit counter-productive). Also, if you don’t have green tea, just use another one you like! As you can see from the previous picture, I used lemon balm tea, as it has lots of great properties and I use it as the “go to tea” for almost everything. Click here for more delicious recipes!

Sponge Cake

This is the final recipe from our Easter cakes, here it goes! Ingredients: 12 eggs 500g of sugar 250g of self-rising flour Lemon zest Preparation: Pre-heat the oven to 180Âș; Separate the yolks from the egg-whites, and whip the whites into stiff peaks; Mix the yolks with the sugar (you can always cut on the sugar, we always use ~50g less than what the recipe says) add the flour; Add the whites but involve them, don’t mix them. This makes the dough super fluffy; Add some lemon zest; Bake until done (do the toothpick test, it never fails); And there you have it! French Pudding

Today I bring you the recipe for the French pudding we made this Easter . You didn’t think I’d forget, right? Ingredients: 2 eggs 10 yolks 400g of sugar ½ L of milk 1 Port wine chalice 2 tbsp (soup spoons) of corn starch Liquid caramel Preparation: Mix the 2 whole eggs and all the yolks with the sugar Add a part of the milk and use the rest to dilute the corn starch Mix everything together Coat the inside of the mold with the caramel Pour the mix into the mold Place the mold in a pressure cooker (fill the pressure cooker with water that reaches the middle of the mold on the outside) and bake it in water bath for 25 minutes. So, this one can be a bit trickier but it’s just a matter of trying and perfecting the technique. A lot of people buy the liquid caramel, but here we do it from scratch, if you wanna know how, you can check it out on my Patreon . Stay sweet and safe!

Chocolate Roll

Here’s the recipe for one of the cakes we baked here this Easter ! I honestly don’t know if there’s any other way to call it anywhere else in the world, so I literally just translated it from how we call it in Portuguese. Ingredients: 250g of sugar 125g of flour 6 eggs 1 tea spoon of ferment Nutella (or any kind of spreadable chocolate) Preparation: Pre-heat your oven to 180ÂșC; Mix the eggs, sugar, flour and ferment in a bowl until you get a homogenous mixture; Pour the mix into a square or rectangular mold; Bake until done (~10 – 15 minutes); Remove cake from the mold and spread the chocolate on top; Roll the cake until you obtain the desired spiral shape. And there you have it! Easter is tomorrow and, even though this might be the most different Easter of our lives, we still wanted to keep the traditions that we could. That means today was BAKING DAY ! We usually have to do a lot more than what we did today (because the family gets together and all) but since it’s just me and my parents we decided to do the three sweets we’re most used to: sponge cake , chocolate roll and French pudding . It always fun setting up everything to start baking with my mom: getting all the ingredients, the utensils, prepping up the oven... I always help with mixing, either by hand or with the help of a mixer. Usually mom mixes by hand (she’s a really strong lady) but age starts getting to everyone so I’m always around to lend a helping hand! I love the bond that comes with these little moments in life, of sharing, laughing and loving. It’s incredible how food can bring people together, but it does! Here are the final products: ...

2-Ingredient Bavaroise

Yes, you read that correctly, I am about to tell you how to make a delicious, yet healthy , bavaroise using only 2 ingredients. It’s really simple , I promise you can do it at home in like... 5 minutes? Trust me. Ingredients : - Flavored gelatin (the flavor you love the most); - Liquid yoghurt of the same flavor. Preparation : First you prepare the gelatin, according to the instructions in the box. For every 500mL of gelatin prepared, pour 1 yoghurt of the same flavor into the mixing bowl. You can then distribute the mixture into smaller serving bowls, put them in the fridge and let it solidify. For the "healthy" effect you can do this with zero calories gelatin and yoghurt. And that is it! I promised it would be simple! If you put the mix into clear cups or bowls, you’ll see a really cool effect where some of the gelatin separates from the yoghurt and creates a different phase. Today I felt kind of anxious and stressed. I don’t remember any reason in particular for it. Stress was considered by the World Health Organization (WHO) the health epidemic of this century. They define it as a real, or perceived, unbalance between a circumstances’ demand and the ability of adaptation of the person. Weather we like it or not, stress is a part of our lives and if on the one hand it can be useful as it makes us take action, on the other hand it can physically and mentally impair us.
